In Korea little chickens are stuffed with a mixture of sweet (glutinous) rice, dried Korean dates, called jujubes, chestnuts, and garlic and simmered in water or chicken broth. Traditionally the soup, called Samgyetang, is made with ginseng, the earthy root also known as Korean carrot, long thought to have restorative medicinal qualities.
