When served with a salad or bowl of soup, this fresh crabmeat omelet—studded with green onions—makes a delicious light supper. When cut into slices, it is served as an appetizer or transported to the picnic table, where it makes a great snack.
In a large bowl mix the egg, green onions, crabmeat, and salt.
In a medium skillet, add the sesame oil and place over medium heat. Pour in the egg mixture and cook until the eggs are set, but still loose.
Sprinkle the cheese, if using, over the omelet. With a spatula, carefully lift one edge of the egg and roll it over, several times, to form a cylinder.
