Tofu, served this simply, begs for the best quality you can find. You must change the water every day or so as tofu can go off very quickly. Without a strong flavor of its own, it absorbs the essence of the sauces it is being cooked with. Serve with Brown and White Rice with Beans and a salad for a perfect vegetarian meal.
