Rinse the potatoes and trim away any dark spots. Fill a medium saucepan half way with water and bring to a boil. Add the potatoes and par boil for about 3 to 5 minutes. Insert the tip of a knife to test doneness. The potatoes should still be firm but easily pierced. Drain the potatoes in a sieve and let sit for 2 minutes to dry out.
