A combination of Asian mushrooms like enoki, shimeji and shiitake are stir-fried and scattered over lightly fried squares of tofu. Any trio of mushrooms with a variety Of textures and flavors, like crimini, oyster or trumpet work well in this very simple dish.

Place the tofu on a microwave-safe plate and heat in the microwave for 1 minute. Drain the liquid from the plate. Cut the tofu in half and half again. You will have four pieces.
