Yooja in Korean or yuzu in Japanese is a type of citron that is prized for its intensely aromatic rind and juice. The small citron is packed with seeds and thus it takes many of them to get even a few tablespoons of juice. Yooja honey is a combination of the rind, honey and sugar and comes in glass jars. It is spooned into boiling water for a distinctive citrusy hot drink.
