This light chicken stock has a hint of ginger giving it a clean finish. If you don’t want to use a whole chicken, wings, thighs and/or drumsticks will also give you a delicious stock. Taekyung turns up the heat for the last bit of cooking to reduce the liquid and concentrate the flavor.
