A classic, go-to jeon for banchan. In fact, think of this recipe as a technique, not a dish: You can substitute almost anything you can easily pan-fry—beef, seafood, tofu pieces, sweet potatoes—all thinly sliced so you fry them consistently, and all served with a dipping sauce. Every jeon needs a good dipping sauce, even if it’s just a little soy sauce sweetened with rice wine vinegar.
