Koreans make savory pancakes, or jeon, with all kinds of ingredients, and my favorite are those filled with chopped shrimp, sliced squid, chiles, and lots and lots of scallions. (Pa means “scallions,” so pajeon is “scallion pancakes.”) For any jeon, a nicely balanced dipping sauce is key. Eat these as soon as you make them, while fresh, hot, and still crisp around the edges.
