Though mild in flavor, these beautiful, glassy delicacies are so much fun to make and serve. (The real trick is picking them up with chopsticks.) The kimchi sauce I serve with them is also fantastic tossed with just about any noodle or vegetable. This is really best fresh, as it tends to take on a milky color and lose its springiness over time.
