If you can, visit a fancy butcher shop to get an heirloom breed of pork with lots of flavor for this BBQ—it’s cooked plain, so good-quality pork makes all the difference. Note that pork belly is in such high demand these days, you might need to order it in advance. I prefer to render out a lot of the fat and cook this till it’s almost well-done—with a little bit of char and crisp—though some people prefer it soft and fatty.
