This treatment is best for fresh shrimp or squid that have not already been frozen, if you can find them. Dip them into ssam jang or a bright, seafood-friendly sauce like my Kimchi Vinaigrette. If you are lucky enough to live within a few hours of a coastline, you should also look for locally caught versions.
