This is my version of the ubiquitous, umami-packed Korean condiment. The name means wrapped (ssam) sauce (jang), and it’s meant to be used anywhere delicious cooked things are wrapped in leafy greens and eaten out of hand. You can easily buy many brands of it in any Korean grocery, but it tastes much better made at home, and you can adjust it to your taste.
