For this spiced, marinated crab dish, I say skip cleaning fresh ones yourself and instead use flash-frozen, cleaned blue crabs that you find in the freezer aisle of Asian supermarkets. I especially like Tong Tong Bay’s frozen seafood, as it’s very good quality. Better still, the freezing process softens the shell so that eating them is easier, too. Just defrost them and let the crabs marinate for at least one hour at room temperature, then pop them in the refrigerator, where they will keep
