For this spiced, marinated crab dish, I say skip cleaning fresh ones yourself and instead use flash-frozen, cleaned blue crabs that you find in the freezer aisle of Asian supermarkets. I especially like Tong Tong Bay’s frozen seafood, as it’s very good quality. Better still, the freezing process softens the shell so that eating them is easier, too.
