  1. Place the giblets in a medium saucepan and cover with 2 inches (5 cm) of water. Place the pan over medium-high heat and bring the giblets to a boil. Cook for about 45 minutes until tender.
  2. In a large saucepan, bring the water to a boil and stir in the grits. Reduce the heat to low and cook for about 20 minutes until soft. Remove the grits from the heat and stir
