Blackened dishes, among which blackened catfish is probably the best known, are made by heating dry spices in a skillet until very hot, adding a fish or meat to the skillet, then turning the fish or meat in the hot spices so a crust forms. As the food cooks to completion, the spice crust turns black, or nearly black, hence the name. It turns out that the Cajun recipe for such a spice mixture, which is now widely known as “blackened seasoning,” offers a quick way to cook a Cajun-style piece
