Ingredients: 12 (approximately 1.2 kg/2 lb 10 oz) pink lady apples; splash of full-cream (whole) milk; 95 g (3¼ oz) caster (superfine) sugar; 20 g (¾ oz) cornflour (cornstarch); 1 egg; 1 teaspoon mixed allspice; 120 g (4½ oz) unsalted butter, softened; 275 ml (9½ fl oz) full-cream (whole) milk; 1 egg yolk; 250 g (9 oz/1⅔ cups) self-raising flour; pinch of salt; 1 teaspoon ground cinnamon; 110 g (4 oz) caster (superfine) sugar; 275 ml (9½ fl oz) thickened (whipping) cream; 1 vanilla bean, seeds scraped; 1 teaspoon ground ginger; 3 egg yolks; golden caster (superfine) sugar for sprinkling; 150 g (5½ oz) caster (superfine) sugar; finely grated zest and juice of 1 lemon

My wife, Cath, gave me this recipe, which I am grateful for. She comes from the Victorian country town of Bacchus Marsh. The town is renowned for its fertile soil that yields plenty of quality fruit and veggies – in particular, apples. Her mum, Trish, made this for Cath when she was growing up and it reminds me of the apple desserts
