Ingredients: finely grated lime zest for garnish; 1 tablespoon liquid glucose; 4 egg whites; finely grated zest of 1 lime; 10 gold-strength gelatine leaves (20 g/¾ oz), soaked and drained; 5 gold-strength gelatine leaves (10 g/¼ oz), soaked and drained; 90 g (3 oz/¾ cup) icing (confectioners’) sugar; pinch of salt; 280 g (10 oz) plain (all-purpose) flour; 1 egg; 1 egg yolk; ½ teaspoon ground juniper; 135 g (5 oz) cold unsalted butter, diced; 4 gold-strength gelatine leaves (8 g/¼ oz), soaked and drained; 400 g (14 oz/1¾ cups) caster (superfine) sugar; 350 ml (12 fl oz) tonic water; 120 ml (4 fl oz) gin; 180 ml (6 fl oz) Sugar syrup; 40 g (1½ oz) citric acid powder; 40 g (1½ oz/⅓ cup) icing (confectioners’) sugar; finely grated zest of 2 limes; 40 g (1½ oz) bicarbonate of soda (baking soda); 8 eggs; 340 g (12 oz) white chocolate, melted and cooled (but still liquid); 260 g (9 oz) unsalted butter, softened; juice and finely grated zest of 6 limes
