Ingredients: 110 ml (4 fl oz) full-cream (whole) milk; 110 ml (4 fl oz) thickened (whipping) cream; 120 g (4½ oz) dark chocolate, roughly chopped; ½ tonka bean (or vanilla bean if you can’t find tonka); 555 ml (19 fl oz) thickened (whipping) cream; Dark chocolate glaze; 270 g (9½ oz) white chocolate, melted; Dutch (unsweetened) cocoa powder for dusting; 15 g (½ oz) skim milk powder; large pinch of sugar; 30 g (1 oz/¼ cup) Dutch (unsweetened) cocoa powder, sifted; 80 g (2¾ oz) plain (all-purpose) flour, sifted; 200 ml (7 fl oz) cold water; large pinch of salt; 95 g (3¼ oz) unsalted butter; 3 egg yolks; 15 g (½ oz) caster (superfine) sugar; 4 eggs
