I love éclairs – they’re a bit posh and you can fill them with anything.
You don’t have to cut the tops off as shown here – you can fill éclairs by making holes in the base and filling them with cream in a piping (icing) bag. The choux pastry is also great for making profiteroles or you can fill them with cheesy sauce for a savoury gougère.
