Ingredients: smoked salt flakes to sprinkle; 1 banana, cut into 5 mm (¼ in) slices; unsalted butter, softened; icing (confectioners’) sugar for dusting; 25 g (1 oz) unsalted butter, at room temperature; 150 ml (5 fl oz) thickened (whipping) cream; 125 ml (4 fl oz/½ cup) thickened (whipping) cream; 1 tablespoon liquid glucose; eight 1 cm (½ in) slices brioche or good-quality white bread, any shape but square does work well; 60 g (2 oz) peanut butter, smooth or crunchy; 100 g (3½ oz) caster (superfine) sugar; 110 g (4 oz) dark chocolate, roughly chopped
