Ingredients: 50 ml (1¾ fl oz) whisky; 50 g (1¾ oz) dark chocolate, coarsely chopped; 1 egg yolk; 370 ml (12½ fl oz) thickened (whipping) cream; 50 g (1¾ oz) caster (superfine) sugar; finely grated zest of 1 orange; 130 g (4½ oz) unsalted butter, at room temperature; 10 g (¼ oz) unsalted butter, melted; 1 teaspoon Dutch (unsweetened) cocoa powder; 40 ml (1½ fl oz) liquid glucose; Whisky syrup (see above); 95 g (3¼ oz) caster (superfine) sugar; 2 egg whites; 340 g (12 oz) dark chocolate, chopped; 100 g (3½ oz) soft brown sugar; 90 g (3 oz) plain (all-purpose) flour; 10 g (¼ oz) cornflour (cornstarch); 2 eggs
