Sclopit (silene) is hard to find outside of Friuli-Venezia Giulia, hut this hook would not be complete without this recipe. Every springtime people throughout the region dote on this herb, which has a sweet-sour taste, a very grassy fragrance, and is really very good. The other cardinal dish is risotto made with bruscandoli, which are fresh hops. These you might find if you live in the mid-western United States, in Germany, the UK, or anywhere beer is brewed.
