This is a very old preparation that is as tasty as it is elemental. No one has been able to tell me what the name means. I tasted sugoli in Cormons at the annual Sagra dell’Uva, the grape festival that takes place on the second Sunday in September.

The secret to making this is to have high-quality wine grapes at your disposal. If you live in a grape-growing zone, you have an embarrassment of riches. Elsewhere, you might find Concord grapes. If all else fails, consider high-qu
