Nut butters are simply pastes made from ground nuts, popular as spreads and as flavorings for sauces, soups and stews. Peanuts are the most common, but almonds, hazelnuts and cashews all work well, especially for sweet dishes. All-purpose oil helps the emulsification without adding another flavor.

The paste may be quite crunchy, or smooth and creamy, as you like. The volume of nuts will be reduced by half.
