A simple breakfast dish that I first discovered in an old WW2 leaflet issued by the Ministry of Food for eggs. My version offers a few luxurious additions to the basic fried egg that sits inside a slice of fried bread, and suggests adding smoked salmon, crème fraîche, diced pink shallots and capers for a special weekend breakfast or brunch.
