This recipe needs good quality maple syrup and a dark brown or porter style beer to make the ham sing. The flavours, for me, are reminiscent of a baked ham dish that I enjoyed in Québec a few years ago, although I have added some Asian style spices for an extra layer of flavour. The spices add a subtle, almost perfumed, taste to the ham once cooked, without being too overpowering. Serve this ham with mashed potatoes and homemade baked beans when hot, and in sandwiches and salads when cold.
