Ingredients

  • 24–30 walnut halves
  • 2 cloves garlic, crushed
  • 1 generous bunch parsley, finely chopped
  • 1 pinch dried chilli flakes
  • 175 ml/6 fl oz extra-virgin olive oil
  • salt and freshly ground black pepper to taste

    Method

    Chop the walnuts finely by hand. A food processor is not suitable for this–it crushes the walnuts too much. Add the rest of the ingredients and mix together.
