  • 1 bunch parsley, finely chopped
  • 3 fillets anchovies
  • 2 pickled gherkins
  • 1 boiled potato
  • 1 clove garlic
  • pinch of salt
  • freshly ground black pepper
  • 1 tablespoon vinegar


    Process all the ingredients, except the pepper. Add extra-virgin olive oil a little at a time to make a semi-fluid sauce and finish with a tablespoon of vinegar. Add a generous amount of pepper.

    To serve with bollito misto.
