  • 5 tomatoes, peeled, seeded and chopped
  • 2 cloves garlic, finely chopped
  • 1 good bunch parsley, finely chopped
  • 1 handful basil, finely chopped
  • salt and freshly ground black pepper
  • olive oil
  • a little vinegar
  • a little grated lemon peel


    Combine all the ingredients. Make 5–6 hours in advance

    To serve with bollito misto.
