Strawberry Water Ice

Granita di Fragole


  • 250 g/8 oz sugar
  • 150 ml/¼ pt water
  • 1 kg/ lbs very ripe, freshly picked strawberries
  • juice of ½ lemon
  • juice of ½ orange
  • whole strawberries for serving


Make a syrup by boiling the sugar and water together for 5 minutes. Allow it to cool.

Pass the strawberries through a sieve, add the lemon and orange juice and the cooled syrup. Freeze in a sorbetière. Serve the granita with a few fresh berries dipped in caster sugar.
