  • 2–3 balls vanilla ice cream per person
  • crushed amaretti biscuits
  • icing sugar
  • ground cinnamon

Method

Make a light batter and leave to stand for 15 minutes.

Roll the ice-cream balls in the amaretti biscuits, dip the balls in the batter and deep-fry in a hot light oil for a few seconds or until the batter is golden and crisp. Drain the balls and dust with icing sugar and cinnamon. Serve immediately. Speed is very important with this recipe. The result is exciting. Do not do too many at a
