If you have any leftover polenta, add enough flour to make a light dough.
Roll out the dough in 15 cm/6 in circles. Do this by breaking off a small chunk and rolling it into a ball, then flattening and rolling it out as thin as a pancake. Fry the polenta pancakes, one at a time, in olive oil, on both sides until crispy. Sprinkle with sugar and eat at once.
