Before squeezing the juice from the lemons wash them thoroughly. Then with a sharp knife, pare the skin from the fruit to make a long spiral. Endeavour to peel the lemon peel in one go. Try not to cut into the pith. Place lemon spirals in a Russian glass teacup, pour boiling water over and leave to infuse for 4–5 minutes. This makes a very soothing drink, either hot or cold.
