Potato Pancakes with Bacon and Maple Syrup

  • 1 small potato, peeled, cooked, mashed and cooled
  • 1 medium egg, separated
  • 50 g plain flour


Put the mashed potato into a mixing bowl with the egg yolk and both of the flours.

Whisk to form a smooth paste by adding a little of the milk at a time.

Season with salt, pepper and nutmeg.

Whisk the egg white until stiff then fold into the mix.

Rub a little oil over the base of a non-stick, or your favourite, pancake pan then gently heat it.
