  • 2 kg good-quality, coarsely minced beef (preferably rib mince), including 20 per cent fat
  • 10 onions, peeled, halved and thinly sliced

Mould the beef into 8 even-sized balls, then flatten them and refrigerate until required.

Cook the onions in the vegetable oil over a low heat in a covered pan.

Remove the lid, season with salt and pepper, add the butter and turn up the heat a little.

Allow the onions to colour and, once golden, remove from the heat and put to one side.

Meanwhile, make the sauce.
