Button mushrooms lend a mild, earthy flavour to this sauce, which we have shown with chargrilled fillet steak, steamed baby zucchini and carrots.

Ingredients

  • 60 g (2 oz) unsalted butter
  • 4 large French shallots, finely chopped

Method

  1. Melt the butter over low heat in a frying pan. Add the shallots and cook for 2 minutes, or until soft and transparent, without colouring. Increase the heat, add the mushrooms and tarragon and cook for 5–7 minutes, or until the mushrooms are golden brown. The mushrooms will make their own liquid. Cook until this has evaporated and they are dry.
