This excellent tomato sauce, full of flavour, is shown here with deep-fried battered fish, but it would also be delicious served with meat or pasta.

Ingredients

  • 2 kg (4 lb) very ripe tomatoes or 4 x 425 g (13½

  1. If using fresh tomatoes, score a small cross in the bases, put in a bowl and cover with boiling water. Leave for 10 seconds before plunging into a bowl of iced water. Drain and, with the point of a sharp knife, remove the stalk and then peel, quarter and remove the seeds. Roughly chop the flesh.
