This creamy dressing is full of flavour and often served over a salad. Shown here with salad leaves and prawns, you could also use it in sandwiches or with burgers.

Ingredients

  • 250 g (8 oz) home-made or good-quality ready-made mayonnaise
  • 80 g

Method

  1. In a bowl, stir the mayonnaise, tomato sauce and chilli relish until combined. Stir in the onion, capsicum, Worcestershire sauce, Tabasco and brandy, each to taste.
  2. Cover the bowl with plastic wrap and refrigerate until needed. Make the dressing at least 20 minutes ahead of serving and leave covered in the refrigerator to allow the flavours to develop.
