Adjust the flavourings in this sauce to your own taste and serve with your favourite seafood, such as the grilled scallops and prawns pictured.

Ingredients

  • 250 g (8 oz) home-made or good-quality ready-made mayonnaise
  • 80 g

Method

  1. Stir the mayonnaise and tomato sauce together in a small bowl. Add a few drops each of Worcestershire sauce, Tabasco and brandy and stir to combine.
  2. Cover the sauce with plastic wrap and chill in the refrigerator. Serve with seafood.
