Add capers and gherkins to mayonnaise for a sauce that teams perfectly with deep-fried battered fish, as pictured here.


  • 25 g (¾ oz) capers, drained and finely chopped

  1. In a small bowl, mix the capers and gherkins with the mayonnaise. Add the parsley, to your own taste.
  2. You may serve the sauce immediately or cover with plastic wrap and chill in the refrigerator for 30 minutes before serving. Serve with grilled or fried fish.
