This dressing is well suited to being served with a salad to accompany goose, pork or Chinese duck as shown in the picture.

Ingredients

  • juice and finely grated rind of 1 orange
  • juice and finely grated rind of 1 lemon
  • ju

Method

  1. Place the rinds and fruit juices in a bowl. Gradually whisk the oil into the mixture and season, to taste, with salt and pepper. This can be done in a blender.
  2. Cover with plastic wrap and leave at room temperature for 1–2 hours to allow the flavours to mature before serving.
