The classic savoury, and basically cheese on toast with a few quid in its back pocket, this is an Anglicised version of Welsh rabbit. Ale, Worcestershire sauce, Cheddar and English mustard – fine, upstanding ingredients all, stalwarts of the Albion kitchen.

No one can agree as to whether this is ‘rabbit’ or ‘rarebit’. The latter means a delicacy, and could have been corrupted into ‘rabbit.’ But ‘rabbit’ appeared in print before rarebit, in
