I have an obsession with consommés, those clear, glittering soups that pack a mighty flavour punch. They’re what my wife would call ‘medicinal eating’, the sort of food that leaves you glowing with health and feeling rather smug. It’s becoming increasingly difficult to find a good canned consommé.
