This is a fusion dish of sorts, mixing wine and olive oil with soy sauce and rice vinegar. But it does work. You can use any white fish in this recipe, and either a whole fish, or fillets. As the flavours are strong, farmed bass is fine, though nowhere near wild bass. John Dory has exceptional sweetness, but it’s best to buy it filleted, as there’s a lot of bone.
