This is a classic of Thai cookery; incredibly simple to make but it does take a little preparation for the chilli and rice powders. I tend to make them both in big batches and store them in an airtight box or bottle. With these to hand, the dish can be made in moments. It mixes the sour with the hot, and the rice powder gives a wonderful golden crunch.
