A deeply soothing, medicinal broth. It’s incredibly easy to make, although you do need good stock. You get waves of lime, lemongrass and galangal that all work in heavenly harmony. A dish we eat pretty much every week. It builds layer upon layer of flavour. Marinating the cooked chicken in the fish sauce and lime base gives an extra level of zing.
