Another chicken creation, with all sorts of goodness hidden within.

Ingredients

  • 25 g/1 oz unsalted butter
  • 2 small onions, roughly chopped

Method

Melt the butter in a saucepan, add the onions and soften over a medium heat for about 5 minutes.

Add the carrots and cook for another 5 minutes, then add the chicken and cook, stirring, until it is white. Add the spinach and cook for 2–3 minutes more, until wilted.

Add the stock or water, bring to the boil, then turn down the heat and simmer, covered, for 20 minutes, or until th
