Ok, it doesn’t sound too appetising, but Lola used to adore this. And all that iron is a good thing. Bacon adds more flavour, as does sage.

Ingredients

  • 750 g/1 lb 10 oz floury potatoes, peeled and cubed

Put the potatoes in a pan of cold water, bring to the boil, then simmer until soft, about 15 minutes. Drain, return to the pan and leave to steam dry for 10 minutes. Mix in the butter and milk, then pass through a ricer and set aside. (Do not blitz the mashed potato in a blender or food processor or it will become like glue.)
