This was one of the first dishes I cooked for my daughter Lola. It’s packed with all sorts of worthy ingredients, and I added sweet potato (one tuber I’ve never really got the hang of) and carrot for an extra allure.


  • 25 g/1 oz unsalted butter
  • 2 small onions, roughly chopped


Melt the butter in a saucepan, add the onions and soften over a medium heat for about 5 minutes.

Add the carrots and sweet potato and cook gently for another 5 minutes. Add the chicken and cook, stirring, until it is white.
